Pâte (j'ai doublé la recette pour avoir un petit dessert l'après-midi du réveillon) :
Chocolate Roll-up
5 eggs
1 cup sugar
1/4 cup sifted flour
3 tablespoons cocoa
1/4 teaspoon salt
1 teaspoon vanilla
Beat egg whites till stiff but not dry.
Gradually beat in 1/2 cup sugar.
Beta egg yolks till thick and lemon-clolored.
Sift remaining 1/2 cup sugar with flour, cocoa and salt.
Fold into yolks till blended.
Add vanilla.
Carefully fold yolks mixture into beaten egg whites.
Line bottom and sides of pan with waxed paper.
Grease paper.
Spread batter evenly in pan.
Bake in slow oven (325°) about 25 minutes.
Cool 5 minutes.
Turn onto towel.
Peel off paper.
Roll cake with towel.
Cool.
Unroll.
Filling
Whipped cream and red fruits.

Un gâteau marbré, en effet, rien de très compliqué... Mais la recette de Martha Stewart est la meilleure que j'ai réussie jusque là. Il n'est pas très light, je vous l'accorde mais très moelleux et se conserve plusieurs jours.

Mix thoroughly 3/4 cup sugar
2 tbsp. soft shortening (butter)
1 egg
Stir in 3/4 cup milk
3/4 cup orange juice
4 tsp. grated orange rind
Sift together and stir in 3 cups sifted flour
3 1/2 tsp. baking powder
1 tsp. salt
Blend in 3/4 cup chopped nuts
Pour into well greased loaf pan.
Let stand 20 min. before baking.
Bake until toothpick stuck into center comes out clean. (about 70 min) (Crack in top is characteristic)
Temperature : 350°F
J' avais fait un peu plus de pâte, histoire d'en faire quelques muffins pour offrir le lendemain :

Non, ce n'est pas n'importe quelle fourchette mais bien une "Poffertjesvork",
cad une fourchette pour décoller les poffertjes de l'appareil sans l'abîmer. Fallait y penser...
